With the economy in shambles as we all know it, making small monthly payments to your caterer sounds like a good idea, and believe me it is. That way the final payment will be much smaller and quite painless if you will. Each month try to send a payment, talk to your caterer and tell them besides any quarterly payments they would like you to do, you would like to instead send a little bit once a month..... it should not be a problem or issue at all.
